Taco Soup

This is a perfect meal for the rainy, cold day we are having!  My whole family loves it and best of all it is easy and ready fast if you need it to be. I usually combine several recipes, because I never have all the ingredients of one recipe.  My husband actually likes it better when I make something up:)

1 lb Ground hamburger, browned
15 oz can Pinto Beans, drained
15 oz can Light Kidney Beans, drained
15 oz can Corn, drained
14 oz can Diced Tomatoes, drained
10 oz can of Tomato soup or you can use Tomato sauce
1 pkg Taco seasoning

Ground your hamburger and drain the grease.  Combine all other ingredients in slow cooker.  Once hamburger is browned add it to the slow cooker.  Cook on low 4-5 hours.

We eat ours with sour cream, tortilla or corn chips, flour tortillas (the kids like to eat is like burritos), and cheese.  I have some avocados that I have going to serve with it tonight.  Yummy!

One-Dish Chicken Supper

This is what's for dinner tonight.  We won't be eating until after tennis this afternoon, but it smells so good and I couldn't wait to post this recipe!  It is a new one, so we'll see how the family likes it.

4 boneless, skinless chicken breast halves
10 3/4 oz can cream of chicken, or celery, or mushroom, soup
1/3 cup of milk
1 pkg. Stove Top Stuffing mix and seasoning
1 2/3 cups of water

Place chicken in slow cooker.  Combine soup and milk.  Pour over chicken.  Combine stuffing mix, seasoning packet, and water.  Spoon over chicken. Cover and cook on Low 6-8 hours.

Now I only had cornbread Stove Top stuffing in my cabinet, so that is what I used.  It doesn't contain a seasoning packet, so I omitted that part.  This is a new recipe and I am excited to see how it turns out.  It smells super yummy and was super easy to make!  You know it is easy when you can easily make it while having a screaming 18 month old at your feet!  I will post later about how it turned out and how the kids like it.  They don't really like stuffing and I just keep it on hand for recipes, so I am hoping they don't notice that is what is in it!

Ok....it was a hit!  Everyone liked it.  The big boys didn't like the stuffing, of course.  I don't think they would have even noticed had their father not asked them if they wanted stuffing! UGH!  The baby liked it too and I thought for sure he wouldn't since it wasn't breaded chicken.

Easy Chicken

This recipe is exactly what the title says, EASY!!  It is a favorite in our house and can be made when you are really in a hurry. Tonight this is what we had for dinner...

5 or 6 FROZEN Boneless, Skinless chicken breasts
1 bottle of your favorite BBQ sauce.

Put in frozen chicken.  Then pour bottle of BBQ sauce over top.  Cook for 4 hours on high or 6 hours on low.

We love Sweet Baby Ray's and it is always on sale BOGO at Harris Teeter, so I stock up and this is a meal I make when I don't have time to think about what ingredients I need.  All you have to come up with is sides!  One variation I have done is added sliced onions on the bottom and that is super yummy, if you like onions.

Tonight I also topped it off with an old favorite dessert, Cherry Dump Cake.  It was not made in the crock pot, but an easy recipe and one that keeping the ingredients on hand is easy to do.

1 can crushed pineapple
1 can cherry pie filling
1 box yellow cake mix
1 stick of butter, melted
1 cup chopped pecans (optional)

Mix the cherries and pineapple and put in 9x13 baking dish.  Then sift cake mix over top.  Put pecans on top, if you choose.  Then pour melted butter on top.  Bake on 350 for 30 mins or until golden bubbly, mine usually takes about 45 mins.

Chicken and Dumplings

This was a new recipe and it is an old favorite of mine, so I decided to give it a whirl.  It turned out good and tasted just like how it was suppose to.  Although I think that I either need a bigger crockpot for this recipe or need to cut the recipe down some, because it made a lot of food!

3- 10oz cans of cream of chicken soup
6- boneless, skinless chicken breasts
1/4 cup of diced onion
water
3- 12oz cans of refrigerated biscuits, quartered

First put the soup in your crockpot.   Then put in the chicken and onions.  I did omit the onions (my kids detest them), but I slipped in some onion flakes.  I also used frozen chicken.  Then add water, just enough to barely cover the chicken.  Cook on Low 6-8 hours or High 4-6.  At 45 minutes until the end, spoon out the chicken and shred it, then put it back in and turn the cooker to high.  Then drop in the biscuits and cook for 35 minutes or until done.  This seemed like a lot of bread and did take me a longer than 35 minutes.
I figured out why mine took longer and cooked out...I use Grands biscuits!  I recommend using regular refrigerated biscuits, that is what I will use next time!
